Built in 1846, Caol Ila Distillery produce a highly prized peated spirit and is our main supply from the Isle of Islay. Our team continuously explore the exciting possibilities of achieving unique flavours onto this smoky spirit through the Art of Maturation – this is our most rewarding to date!

This spellbinding character has been achieved by filling the untamed peated malt into an unusually sized 130-litre Tokaji dessert wine cask. After 18 months of additional maturation, the exceptional integration and balance of the raw peat and elegance of the sweet Hungarian oak is an absolute triumph.
