The rise and rise of English Whisky.
White Peak are just one of a number of English Distilleries that have really started to show what they are all about. Over the last few years many distilleries have popped up south of the Border but White Peak for us is one that are doing things on an extremely different level. With the huge success they have had to date with their own Wire Works releases it is with great pleasure that we have the opportunity to stock a bottle from a much loved and much respected indy bottler, Phil and Simon Thompson from Dornoch Distillery.
1st fill Bourbon
Single cask, 247 bottles
All natural colour and non chill-filtered.
Nose.
Opens green and bright, reminiscent of an excellent mezcal – notes of green pepper, lime zest, and fresh lime juice. The smoke is elegant and harmonious, lending balance, salinity, and coastal nuances of crushed shells and weathered driftwood. With water, more citrus emerges – lemon and grapefruit peel, perhaps a touch of lemon curd. Hints of smoked almonds (the good ones!) and salted peanut brittle add richness.
Palate.
Neat, the peat comes to the fore – salty, mineral, with a touch of iodine and hessian. A splash of water brings forward more citrus, echoing the nose. Subtle notes of smoked ham, cockles, and seashells develop, maintaining a refined and balanced profile throughout.
Finish.
Dry and textured, with grist, hessian, lemon zest, and a whisper of ground ginger.
