Notes from the Bottlers:
I fondly remember the old Diageo special releases with the unpeated Caol Ilas, from memory the
final one was a NAS Stichell Reserve. I think the majority of these bottles were sherried and so we did consider a sherry finish on this stock but we actually much preferred doing what we could with this particular whisky to showcase that unique distillate. This is a deliberately distillate forward bottling. Caol Ila is a distillate that we love, you’ve heard us say that many times before, but the chance to appreciate, understand and add unpeated Caol Ila to your palate memory bank drove our decisions here. A wonderfully high cutting point making for something quite elegant, sweet and delicate here. The rarity made these casks fairly expensive but we hope you agree the experience is worth it.
The label – Chris has accused me of being too obscure with some of the references to our label art, this is no exception. The theme, the absence of peat/Pete. Peter Green was one of the founding members of the band Fleetwood Mac. They continued long after he left the band but the first album without Pete was Kiln House. So no Pete/peat but there’s a kiln? Surely this is the perfect reference for a Caol Ila without Peat! We’ve also got wee bonus stickers coming to draw attention to the fact that this is unpeated and rather special.

Passionfruit coulis, custard tart, white grape juice

Lemon sherbet, elderflower cordial, sea salt.
